I have recently decided to start trying new recipes-and here is the first one-Lee approved
Taco Pot-Pies(sort of)
ingredients
*1 pkg of crescent roll dough(fridge kind)
*1 wonder roast picked apart(only use a little-save the rest for the next night recipe-broccoli pie)
*1tomato
*1/2 jalapeño
*1/4 block of cream cheese
*1/2 can of refried beans
*1/2 onion (i only used it on Lee's- I hate onions-so if you like them you can use more)
*1/2 pkg of taco seasoning
-Pre-heat the oven to cook the crescent rolls as indicated on the pkg
-in a chopper or blender or by hand dice the onions, jalapeño and tomato
-spray a cookie sheet with non-stick spray (just incase things over flow :) )
-open the rolls and lay out on the pan-use 2 per "pot-pie"- arrange the two so they make a square
-pinch them together so they are one piece(makes 4 "pot-pies" per package)
-gently spread the refried beans on the bottom- yes this is messy- i ended up using my hands because i kept ripping the dough
-cut or rip little pieces of cream cheese and place about the squares
-spread the onion, tomato and jalapeño mix down (amount to taste)
-place some of the shredded chicken in the middle
-sprinkle some of the taco mix over the open "pot-pie"
REMEMBER WHEN YOU ARE MAKING THESE YOU WILL HAVE TO CLOSE THE SIDES SO BE CAREFUL NOT TO OVER STUFF -OR DO IT IF YOU'D LIKE A MESSIER DINNER :)
-time to fold
pull the edges to the middle and pinch together- don't pull too hard because the bottom may open up again (yep we had a small mess from this)
-bake according to directions on crescent roll pkg
-when you take them out of the oven let cool a bit-they will be hot in the middle
We served these with chips and salsa and sour cream
